cheeses, while respecting the animals and the environment.<br />

<strong>The</strong> 400 acre farmincludes 230 acres of certified organic<br />

pasture whereaherdofJerseyand Milking Short Horn<br />

dairy cattle enjoy alushvariety of grass and forage. <strong>The</strong><br />

cows mow the grass and fertilize it too! This saves fuel and<br />

eliminates the need for chemical fertilizers. <strong>The</strong> cows come<br />

inside twice a day to be milked but otherwise spend all their<br />

time outside grazing.<br />

Raw milk from grass-fed cows gives the cheese maker a<br />

fantastic starting material for his craft. From June – August,<br />

cheese is made up to 7timesaweek.Cheeses produced<br />

range from slowly pasteurized, 40-day-old Buttercup Brie<br />

to Havilah, an aged hard raw milk cheese.<br />

<strong>The</strong> whey from the cheese facility feeds a herd of<br />

heritage-breed pigs. Whey is full of protein and helps make<br />

great pork. No growth hormones, antibiotics or steroids<br />

are used in their feed. All pork products have no nitrates or<br />

preservatives, even the smoked meats like bacon and ham.<br />

<strong>The</strong> farm store is supplied daily with fresh eggs from a flock<br />

of 600 pasture-raised chickens and grass-fed lamb and<br />

meat products from a flock of Katahdin sheep.<br />
