This thịt nướng, which is also known as a Vietnamese grilled pork recipe, is so good and flavorful you will be questioning yourself if you really made this or if it came from your favorite Vietnamese restaurant.
Should I use my Air fryer or Stove top to cook thit nuong?
I have cooked Vietnamese grilled pork both in the Air fryer method and stove top and both come out great. Usually I will air fry if I need to do other things in the kitchen like prepare veggies and herbs. If I'm shorter on time, I will throw this onto a pan and cook 2-3 mins per side on medium high. You can also throw this onto the grill for a very authentic taste, or in the oven for very large batches too. All cooking directions are below.
How do you eat thịt nướng?
Thịt nướng is usually served with rice, fresh veggies and nước chấm dipping sauce. You can also serve it on top of a bed of rice noodles, and fresh veggies with a side of nước chấm too.

Ingredients
For the Marinade
- 3 lbs Pork (I used pork butt)
- 1.5 tbsp Fish Sauce
- 1.5 tbsp Soy Sauce
- 1 tbsp Dark Soy Sauce
- 1 tbsp Oyster Sauce
- 1 tbsp Sesame Oil
- 2 tbsp Brown Sugar
- 1 tbsp Garlic
- 1 Shallot
- 1 tbsp Lemongrass
Scallion Oil
- 4 stalks Green onion
- ⅛ cup Vegetable Oil
- ⅛ tsp Salt
- ⅛ tsp Sugar
Instructions
- 1. Let's start by preparing our garlic and shallots. Mince about 3 pieces of garlic, and 1 shallot.
- 2. If you are using pork butt, slice into thin slices about ¼" thick. Pro Tip- If you freeze the meat for 30 minutes before slicing it will be easier to make thin cuts. You can also use thin pork chops with the bone in, or ask your butcher to slice it for you too. 3 lbs Pork (I used pork butt)
- 3. Combine the following ingredients with the pork and set aside for at least 10 minutes. The flavors will be even more amazing if you marinate overnight! 1.5 tablespoon Fish Sauce, 1.5 tablespoon Soy Sauce, 1 tablespoon Dark Soy Sauce, 1 tablespoon Oyster Sauce, 1 tablespoon Sesame Oil, 2 tablespoon Brown Sugar, 1 tablespoon Garlic, 1 Shallot, 1 tablespoon Lemongrass
Air Fryer Cooking Instructions:
- 4. Preheat your Air fryer to 400F and cook for 10 minutes and flip halfway. If you are using thin pork chops, you may need 15 minutes cook time. For a little extra char cook an additional 1-3 minutes.
- 5. Garnish with Scallion Oil
Stove Top Cooking Instructions:
- 4. Preheat your pan to medium high and add oil. Cook the Pork in small batches for 2-3 minutes on each side. If you are using pork chops cook for 4-5 minutes per side depending on the thickness of the chop.
- 5. Garnish with Scallion Oil
Oven Cooking Instructions:
- 4. Preheat Oven to 375, cook for 10-15 minutes and then broil for 1-2 minutes. Watch closely for burning. For Pork chops cook about 15 minutes and flip halfway. Broil for 1-2 minutes.
- 5. Garnish with Scallion Oil
Making the Scallion oil
- 1. Wash and slice your scallions (Green parts only) , Place into a heat safe bowl.4 stalks Green onion
- 2. Heat up oil in a pan for about 1 minute on medium heat⅛ cup Vegetable Oil
- 3. Carefully pour the oil over your sliced scallions, mix well
- 4. Let cool 5 minutes and add your sugar and salt⅛ teaspoon Salt,⅛ teaspoon Sugar
- 5. Garnish over your grilled pork
