Fluffy Bunny Pancakes

Ingredients


1 cup All-purpose white flour
1 tbsp Granulated sugar
2 tsp Baking powder
1/2 tsp Salt
1 large Egg
3/4 cup Partly skimmed milk, 1% M.F.
1/4 cup Butter, unsalted (melted)
1/2 small Banana (s)
1 tsp Semisweet chocolate chips, mini
2 tbsp Whipped cream topping, pressurized
1 tbsp Coconut, shredded, unsweetened

Instructions


  1. Preheat griddle over medium-high heat. 
  2. Whisk together flour, sugar, baking powder, and salt. 
  3. Combine egg, milk, and melted butter in a separate mixing bowl, then stir into dry ingredients just until moistened.
  4. To cook each bunny:
    • Make a pancake 4 in. wide for the body,
    • Make a pancake 2-1/2 in. wide for the head
    • Make two small oval-shaped pancakes for the feet,
    • Make two small triangular pancakes for the ears.
  5. Spoon batter onto griddle; cook until bubbles form on top of pancakes. Turn; cook until the second side is golden brown.
  6. To form each bunny:
    • Place ears at the top of a plate. 
    • Place head slightly overlapping the bottom of the ears
    • Top with body slightly overlapping head
    • Place feet slightly overlapping body. 
    • Place a banana slice on each foot; arrange mini chocolate chips at the end of each foot for toes. 
    • Dollop whipped cream on the body just above the feet; sprinkle with coconut for the tail.
  7. Serve immediately.
