Gibbering mouthers are abominations. They don't just threaten adventurers by being multiple-mouthed blood-sucking protoplasmic blobs - they also literally constantly gibber, which acts like a Confusion spell.
Since that's the closest D&D gets to "lose more than 5 SAN and go temporarily insane," I assume this means that as they attack they murmur and meep semi-coherent blasphemous glimpses of a logic beyond that of the normal, sane D&D universe.
I figure the dwarf chick can handle it okay.

A Gibber has a counterpart in the mundane world. Think of the sales clerk gibbering in your ear, Would you like to buy the extended warranty? It's benefits are beyond measure, such as...blah..blah...gibber gibber...
For a moment, I read Gibbering Mother, and I fully agreed with it. :P
Good 'ol classic D&D. Many happy memories of paging through the first edition Monster Manual before bed. You should do a roper or otyugh next. ^^
No rot grubs though, please.

I rather like the gibbering monster that pops up briefly in "The Scarlet Citadel" that freaks Conan out by sounding exactly like a woman crying.
These things are significantly more satisfying to dispose of when one has explosives available.
That said, cleaning up afterwards is a total pain.

I kind of wish they'd make a cinematic version of this... I can imagine it, and it's awesome. Of course, considering how the D&D movie went, that's probably a bad thing to ask for.
I used to hate fighting these things, before we even got close enough to attack it someone would end up losing their will save and then their mind. :p
I've never actually encountered, nor used, a gibbering mouther during a game!
Our DM liked the extra freaky monsters, it was like Resident Evil meets Slenderman :p
