T-Bone Steak with Thyme and Garlic Butter

Is there anything better than a beautifully cooked steak? I love the simple flavors in this recipe—just great-quality meat paired with a garlicky herb butter. Perfect!

Ingredients

2 Servings

1/4 cup (1/2 stick) unsalted butter
2 tablespoons olive oil
1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature
Sea salt and cracked black pepper
6 sprigs thyme
6 cloves garlic, unpeeled

Preparation

  1. Heat the butter and oil in a large frying pan over high heat for 1–2 minutes or until the butter starts to foam. Sprinkle the steak with salt and pepper. Add the thyme, garlic and steak to the pan and cook for 4–5 minutes on each side, spooning the butter over the steak, for medium-rare or until cooked to your liking. Drizzle the steak with the butter to serve.

  • I tried following the recipe to a T as I hadn't cooked a thick steak before and not only did it fill my house with so much smoke it was unbreatheable, but the steak was burnt... a waste of a $14 Tbone... I hope my fiance still eats it...he was really excited for his steak. 🤦‍♀️ I didn't even have it on High because that was causing touch smoke so I turned it down a bit to like med-high and it somehow made it worse. Cooking with cast iron.

  • This is a FAB recipe! Followed it to a T--no changes and improvisations (I don't have enough experience for such things!). I make this for my boyfriend whenever he wants to have steak and potatoes for dinner. Each time he has commented that the steak is super delicious. It pleases me greatly to please him~ Thank you for the recipe!

  • I follow this recipe, on a certified angus bone-in Rib-Eye steak. I could not contain myself to give it a little twist, so I also added a tablespoon of Shiraz wine, and another of A-1 steak sauce to the butter and olive oil, mixing it well as they heat up.... and also added petite diced shallots... the result was such a flavorfull steak... that I am repeating it again in a couple of days. Try it also on 80/20 ground chuck beef burgers.... served on a brioche bun with applewood smoke bacon and thinly sliced swiss cheese, with a zig-zag of brown mustard and mayo on the base of the bun... incredibly good!
