It’s not Super Bowl season unless you’ve managed to find a solid salsa to serve as the centrepiece of your football feast. Prime Minister Stephen Harper’s wife, Laureen, shared her recipe for salsa success below.
INGREDIENTS
-8 large tomatoes
-1 medium-sized yellow onion
-powdered garlic to taste
-1 lime or 2 limes (juiced)
-1 small can of green chiles
-Jalapenos (I like pickled but you can add fresh)
-Pickled pepper mixture (again, to taste, a mixture of hot peppers)
1. Cut or food-process the tomatoes to the consistency you like and add the can of chiles. Make it chunky or make it smooth.
2. Food process the onion and add to the tomatoes, add the garlic (lots if you like garlic, less if you don’t).
3. Squeeze the juice of one lime (or 2 limes if they aren¹t very big) into mix and then add jalapenos to taste. Lots if you like it hot, less if you don’t.
4. I usually make it in the morning and it is good for the evening. I also add it to rice or eggs.
5. You can roast some of the tomatoes under the broiler if you like the consistency to be more like a bottled salsa but I like the fresh stuff the best.
6. You may like to garnish with cilantro if you like cilantro. Myself, I am not a big fan.
7. The bottled pepper mixture is very colourful and adds a great taste.
