Let’s talk caster sugar! I can’t really call this a recipe- it’s really more of a kitchen hack. In the United States, caster sugar is often referred to as superfine sugar (not to be confused with the even finer powdered or confectioner’s sugar, which also has cornstarch added to it). Regardless what you call it, this finely ground sugar is a wonderful ingredient for baking and other kitchen adventures.
Because it’s finer than granulated sugar, caster sugar dissolves more readily in liquids and incorporates more seamlessly into bakes. Superfine sugar is difficult to find in the United States, and sugar labeled “caster sugar” can only be found in the international or British sections of the grocery store (at a much higher cost than I could personally justify), so I decided to make my own. I quickly realized just how easy it is! Literally all you need is granulated sugar and a food processor. That’s it!

All you need to do to make caster sugar is pour granulated sugar into a food processor, turn it on for a minute or two until it’s reached a very fine consistency, but before it becomes a powder.

Once you’ve finished, decant your caster sugar into an airtight container and store it indefinitely!

- 2 cups granulated sugar
Instructions
- Pour the sugar into the pood processor with the cutting attachment in, and run it for a minute or two.
- Decant into an air-tight container, and store indefinitely!
